The story
Arnaud Vely was a biomedical engineer. Happy on paper, but not really. One weekend in London, a British crumble — and the urge to reinvent it the French way.
I had a good salary — but I wasn't happy going to work. Crumble is my freedom.

The crumble bar
Crumbles is the first coffee shop entirely dedicated to crumble in Paris. Located at 3 Rue Pierre Fontaine, in the 9th arrondissement, steps from Pigalle, Blanche and Saint-Georges metro stations, the shop offers a single modular recipe: build your crumble from €6.50. Four steps — French seasonal fruits, classic or oat base, toppings (custard, caramel, chantilly, PLAQ chocolate), crumblings (meringue, pistachio, hazelnut, almond, pink praline) — and hundreds of possible combinations.
Everything is homemade on site: compote is cooked on demand, the topping is hand-crumbled, custard is whisked every morning. Flour comes from an organic Île-de-France mill, coffee from the Paris roaster Tanat Coffee, chocolate from PLAQ chocolate makers. Neighborhood & events
In just a few years, Pigalle and SoPi (South Pigalle) have become one of the most active Paris neighborhoods for new pastry and specialty coffee.
